Truth © Three 6oz Packs Fresh Raspberries 1/2 Cup Finely Diced Red Onion 1/4 Cup Cilantro, chopped 2 Tbsp Minced Jalapeño 4-1/2 Tsp Fresh Lime Juice 2 Tsp Kosher Salt 1 Tsp Minced Garlic 1 Tsp Ground Cumin, toasted (Optional) 1/2 Tsp Ground Black Pepper 1 to 2 Tsp Sugar, to taste Combine raspberries, onion, cilantro, jalapeño, lime juice, salt, garlic, cumin andpepper in a large bowl.Mash gentlywith awhisk to release berry juices, leaving large pieces of raspberry in the salsa. Add sugar to taste. Chill for one hour and adjust salt, pepper and sugar. Serve with fish, poultry, chips, or cheese. Many other fruits may be used insteadof raspberries.
