Sprinkle with salt and set aside. Combineflour,cornmeal,bakingpowder,sugar,salt andcayenne inaseparate bowl and mix well. Squeeze moisture from the zucchini. Add zucchini, cheese and onion to the flour mixture, andmix well. Add buttermilk, oil and egg, stirring until evenly moist. Spoon into muffin cups sprayed with nonstick cooking spray. Tidewater Trader the local people's paper All Is Not Lost Matey as the 13 th Annual Rock Hall Pirates &Wenches Festival Will Hold Virtual and Some Socially Distanced Events Each year in Rock Hall, the annual Pirates & Wenches Fantasy Weekend packs in crowds of festival goers seeking the pirate experience during its three-day festival. This year the main events have been cancelled, and instead some virtual and socially distanced events will be held. The 13th annual festival has been deemed “Lost at Sea”. A limited supply of will be available at The Hick- ory Stick, and this year’s official “Lost at Sea” merchandise can be ordered online. Virtual Costume Contests will be held via Zoom on Saturday, August 15 th . Best Dressed winners in each contest will receive official “Lost at Sea” t-shirts. VIDALIA ONION CASSEROLE 4 Large Vidalia Onions, quartered 7 Tbsp Butter 2 Eggs, beaten 15oz Can Evaporated Milk 1 Tube Ritz Crackers, crushed 1-1/2 Cups Grated Cheese Salt & Pepper to Taste Boil the onions until they are slightly tender then drain. Heat 4 tbsp. of butter in a skillet and saute the onions. Beat eggs and evaporated milk together, add the onions, half of the cracker crumbs, cheese, salt and pepper. Bake in a buttered casserole dish at 375˚F for 35 minutes. Melt the remaining 3 tbsp. of butter and stir into remaining cracker crumbs, then top the casserole with the crumbs and bake an additional 15 minutes.
