In a large bowl, combine flour, cinnamon, baking soda, baking powder and salt. In another bowl, beat eggs, sugar, oil and vanilla. Add dry ingredients and stir until combined. Fold in zucchini and nuts. Grease and flour two 8x4x2 loaf pans. Pourmixture evenly intopans. Bake until inserted toothpickcomesout clean. Cool for10minutes. Remove tocoolingrack.Freezes well.
