LULU’S PICKLED PEPPERS & ONIONS 1/2 Small Red Onion, cut into 1/4-inch slices Ice Water Using Half of Each: Red, Yellow, and Green Peppers, cut lengthwise into 1/4-inch strips 1 Cup White Vinegar 6 Tbsp Sugar 2 Tbsp Kosher Salt 1/2 Tsp Dried Crushed Red Pepper Soak onion in ice water, covering the onion, for 10 minutes; drain. Place peppers and onions in a clean 1 quart canning jar. Bring vinegar, next three ingredients and 1 cup of water to a boil in a non-aluminum saucepan over medium high heat, stirring occasionally until sugar dissolves. Pour hot vinegar mixture over the vegetables in the jar. Let stand, uncovered, for one hour. Cover and chill for 24 hours. Store in the refrigerator up to a week in an airtight container. Put these on some barbecue, on burgers, dogs, or in some slaw!
