Four 6 Oz. Salmon Steaks
Olive Oil for Brushing
Salt & Pepper to Taste
1 Lb. Fresh Grape Tomatoes, seeded and chopped
2/3 Cup Packed Chopped Fresh Arugula or Basil
1 Shallot, chopped
1-1/2 Tsp Drained Capers
1/2 Cup Olive Oil
Brush both sides of salmon with olive oil and salt and pepper.
Grill over medium heat for 3 to 5 minutes on both sides. Don’t overcook.
Mix together salsa ingredients and spoon over salmon.
